Instructions

  • Heat the oven to 400°F.
  • Remove the outer leaves from the cauliflower and cut off the bottom of the stem. Cut out the hard core, taking care not to cut into the florets. Rinse the cauliflower and place it in a microwave-safe dish with 2 tablespoons of water. Cover loosely with a microwave-safe lid or damp paper towels and microwave on 100% power for 7 to 9 minutes, or until just tender.

  • Tip: Leave enough core intact so the cauliflower holds together after microwaving.
  • Remove the cauliflower to a lightly greased baking sheet.
    Butter, oil, or cooking spray, for the baking sheet
  • Combine the mustard, olive oil, salt, and pepper. Brush the mustard mixture evenly over the cauliflower.
    2 tbsp Dijon mustard | 1 tbsp extra-virgin olive oil | 1/4 tsp kosher salt | 1/4 tsp freshly ground black pepper
  • Roast the cauliflower for 20 to 25 minutes, or until tender and lightly browned.
