Turkey Meatloaf With Cranberry Glaze

Ingredients
  

  • Cooking spray for the pan
  • 1 (14-ounce) can cranberry sauce, divided
  • ½ cup chili sauce or ketchup
  • 1 to 1 ¼ pounds ground turkey
  • ½ pound ground pork
  • 1 large egg, lightly beaten
  • 1 cup soft breadcrumbs
  • 1 medium onion, finely chopped
  • 1 ½ tsp ground poultry seasoning
  • 1 ½ tsp kosher salt
  • ¼ tsp freshly ground black pepper

Instructions

  • Spray an 8 1/2-by-4 1/2-inch loaf pan lightly with cooking spray. Line the pan with parchment paper, leaving an overhang for easy removal. Heat the oven to 350°F.

  • For the glaze, combine 1/2 cup of the cranberry sauce with the chili sauce or ketchup in a bowl. Spoon the remaining cranberry sauce from the can into a separate bowl, cover, and refrigerate to serve with the meatloaf later.

  • In a mixing bowl, combine the ground turkey and pork with the egg, breadcrumbs, onion, poultry seasoning, salt, and pepper. Add 1/3 cup of the cranberry-chili glaze mixture. Reserve the remaining glaze for topping.

  • Mix the meat mixture just until blended, then gently press it into the prepared loaf pan. Bake for 1 hour. Spread the reserved glaze over the top and bake for 15 minutes longer, or until the center reaches at least 165°F on an instant-read thermometer.
  • Tip: Mix the meatloaf only until the ingredients are evenly combined. Overmixing or packing it too tightly can make the meatloaf dense.
  • Let the meatloaf rest in the pan for 5 to 10 minutes. Use the parchment overhang to lift it out, then transfer it to a platter. Serve with the reserved cranberry sauce on the side, if desired.
  • Remove the turkey meatloaf to a platter. Serve with the remaining cranberry sauce on the side, if desired.
