Ingredients
  

  • 1 tbsp vegetable oil
  • 1 pound ground turkey
  • 1 cup chopped onion
  • ½ cup chopped green bell pepper
  • 1 tsp minced garlic
  • 1 (14.5 oz) can diced tomatoes
  • 3 tbsp tomato paste
  • 2 (15-oz) cans pinto beans, drained and rinsed
  • ½ cup prepared salsa
  • 1 tbsp chili powder
  • 1 tsp ground cumin
  • ½ tsp dried oregano
  • Salt and pepper, to taste
  • 1 cup shredded cheddar cheese or Monterey Jack
  • Sour cream, avocado, cilantro, jalapeño rings, lime wedges (optional), for serving

  • Heat the vegetable oil in a large skillet over medium heat. Add the ground turkey, onion, and bell pepper and cook, stirring frequently, for 6 to 8 minutes or until the turkey is browned. Add the garlic and cook for 1 more minute.

  • Transfer the turkey mixture to the slow cooker and add the tomatoes, tomato paste, beans, salsa, chili powder, cumin, and oregano. Stir and season with salt and pepper, to taste.

  • Cover and cook on low for 5 to 6 hours.
  • Tip: For a thicker chili, leave the lid slightly ajar for the last 20 to 30 minutes, or mash some of the beans into the liquid before serving.
  • Top servings with shredded cheese and your favorite garnishes, such as sour cream, avocado, cilantro, jalapeño rings, or lime wedges.
