Ingredients
  

  • Butter, oil, or cooking spray, for greasing the baking dish
  • 1 tbsp vegetable oil
  • 1 pound lean ground beef
  • 1 (10.5-oz) can cream of mushroom soup
  • 1 (10.5-oz) can cream of chicken soup
  • 1 cup red enchilada sauce, mild or medium
  • 1 cup milk
  • 1 (4-ounce) can green chile peppers, chopped
  • 1 (9.25-ounce) bag Doritos, nacho flavored, crushed, divided
  • Salt and pepper, to taste
  • 1 cup shredded cheddar cheese or a Mexican cheese blend

Instructions

  • Heat the oven to 350°F. Lightly grease a 2-quart baking dish.

  • Heat the vegetable oil in a skillet over medium-high heat. Add the ground beef and cook undisturbed for 4 to 5 minutes. Break the beef up and continue cooking and stirring until it is no longer pink.

  • Stir the soups, enchilada sauce, milk, chopped green chile peppers, and about three-quarters of the crushed Doritos into the browned ground beef. Taste and add salt and pepper, as needed. Transfer to the prepared baking dish and top with the remaining chips.

  • Tip: This casserole is already salty from the soups, enchilada sauce, Doritos, and cheese, so make sure you taste the filling before adding any extra salt.
  • Top with the shredded cheese and bake for 25 to 30 minutes, until the casserole is hot and bubbling and the cheese is melted.
