Sweet Potato Cobbler

  • Peel and slice the sweet potatoes about 1/4 inch thick. You should have about 3 cups of slices. Bring a medium saucepan of water to a boil. Add the sweet potatoes. Reduce the heat to medium-low and cook for about 8 minutes, or until the slices are just tender but not falling apart. Drain and set aside to cool.

  • Tip: Cook the slices just until barely tender. If they get too soft, they may break apart when mixed with the syrup.
  • Heat the oven to 350°F.
  • Put the butter in a 2 1/2-quart baking dish and place it in the oven just until melted.

  • Meanwhile, in a bowl, combine the flour, 1 cup of granulated sugar, and milk; mix until well blended.

  • Tip: To replace 1 cup self-rising flour, use 1 cup all-purpose flour plus 1 1/2 teaspoons baking powder and 1/4 teaspoon salt.
  • In a separate bowl, combine 1 cup of granulated sugar with the brown sugar, water, vanilla, and cinnamon. Mix well and add the cooled sweet potato slices.

  • Take the baking dish with the melted butter out of the oven. Pour the batter into the center of the melted butter; do not stir.
  • Gently spoon the sweet potato mixture into the center of the batter; do not stir.
  • Place the baking dish on a rimmed baking sheet to catch any spills, then bake for about 45 minutes, or until the cobbler is golden brown and the batter is set.
