Sweet and Spicy Dipping Sauce

This sweet and spicy pineapple sauce is the perfect dip for coconut shrimp. It's also terrific with chicken tenders or fried shrimp .

- 1/2 cup apricot preserves
- 1/4 cup drained crushed pineapple or finely chopped pineapple slices or fresh
- 1 1/2 teaspoons rice vinegar
- 1 teaspoon chili garlic paste, sambal, or Thai chili sauce (or more, to taste)
- 1/4 to 1/2 teaspoon finely chopped cilantro, optional
Combine the preserves, pineapple, vinegar, and chili paste. Blend thoroughly.
If desired add chopped cilantro or divide the dip among smaller bowls and top each with some chopped cilantro.
