This sweet and spicy pineapple sauce is the perfect dip for coconut shrimp. It's also terrific with chicken tenders or fried shrimp .

Ingredients
  

  • 1/2 cup apricot preserves
  • 1/4 cup crushed pineapple , drained, or finely chopped pineapple slices or fresh
  • 1 1/2 teaspoons rice vinegar
  • 1 teaspoon chili garlic paste, sambal, or Thai chili sauce (or more, to taste)
  • 1/4 to 1/2 teaspoon finely chopped cilantro, optional

Instructions

  • Combine the preserves, pineapple, vinegar, and chili paste. Blend thoroughly.
  • If desired add chopped cilantro or divide the dip among smaller bowls and top each with some chopped cilantro.
