Sweet and Spicy Dipping Sauce

This sweet and spicy pineapple sauce is the perfect dip for coconut shrimp. It's also terrific with chicken tenders or fried shrimp.

Ingredients
  

  • ½ cup apricot preserves
  • ¼ cup crushed pineapple, well drained (or finely chopped pineapple slices)
  • 1 ½ tsp rice vinegar
  • 1 tsp Asian chili garlic sauce or paste, or to taste
  • Finely chopped cilantro (optional)

Instructions

  • Combine the preserves, pineapple, vinegar, and chili garlic sauce in a small bowl. Stir until well blended.
    1/2 cup apricot preserves | 1/4 cup crushed pineapple (well drained (or finely chopped pineapple slices)) | 1 1/2 tsp rice vinegar | 1 tsp Asian chili garlic sauce or paste (or to taste)
  • If desired, stir in a little chopped cilantro, or divide the dip among small bowls and garnish each with cilantro.
    Finely chopped cilantro (optional)
