Swedish-Style Meatballs

Ingredients
  

  • Butter, oil, or cooking spray, for greasing the pan

For the Meatballs

  • ½ cup milk, or half-and-half
  • 1 cup soft breadcrumbs
  • 1 large egg
  • 1 ½ tsp kosher salt
  • ¼ cup finely minced or grated onion
  • ¼ tsp white pepper
  • ¼ tsp nutmeg
  • 1 ½ pounds ground beef
  • ½ pound ground pork

For the Sauce

  • 1 tbsp unsalted butter
  • 1 tbsp reserved meatball drippings, if available
  • 2 tbsp flour
  • 1 ½ to 2 cups beef broth, preferably low sodium
  • 1 cup heavy cream
  • 2 tsp Worcestershire sauce
  • Kosher salt, to taste
  • tsp ground nutmeg (optional)
  • 1 pinch ground allspice (optional)

Instructions

Make the Meatballs

  • Position a rack in the center of the oven and preheat it to 400°F. Lightly grease a large, rimmed baking pan.

  • Combine the milk and crumbled bread in a large bowl and let stand for 5 minutes. Whisk in the egg, 1 1/2 teaspoons of kosher salt, the onion, 1/4 teaspoon of white pepper, and nutmeg. Add the ground beef and pork and mix to blend thoroughly. Shape the mixture into 1-inch meatballs.

  • Arrange the meatballs in the pan and bake for 16 to 20 minutes, until cooked through. They should register at least 160°F on an instant-read thermometer. Remove to a rack and set aside. Save 1 tablespoon of the drippings for the sauce, if desired. If the pan is dry or the drippings seem overly greasy, use an extra tablespoon of butter instead.

Prepare the Sauce

  • Combine the butter and the reserved 1 tablespoon of meatball drippings (or 2 tablespoons of butter if there are no drippings) in a large saucepan over medium heat. When the butter begins to sizzle, add the flour. Cook, stirring, for 2 minutes.

  • Gradually whisk in 1 1/2 cups of beef broth and the Worcestershire sauce and cook until bubbling and thickened. Gradually whisk in the heavy cream. If too thick, add more beef broth, a little at a time. Taste and adjust the seasonings with kosher salt, nutmeg, and a pinch of allspice, if desired.

  • Add the meatballs to the sauce and gently stir to coat them; heat through.
