Spinach Pesto

This easy spinach pesto makes a tasty spread for sandwiches and snacks. It also makes a delicious filling for chicken breasts.
Course Parmesan Cheese, Spinach
Prep Time 10 minutes minutes
- 1 cup basil leaves, packed, about 2 ounces
- 2 cups baby spinach leaves, packed, about 4 ounces
- 1/2 cup extra-virgin olive oil
- 1 cup coarsely chopped walnuts
- 1/3 cup freshly grated Parmesan cheese
- 2 cloves garlic, chopped
- salt and pepper, to taste
Add all ingredients to a food processor and pulse until smooth. Taste and add salt and freshly ground black pepper, to taste.
Use it as an appetizer spread or dip or spread it over baked fish or chicken.
The recipe makes about 2 cups, and it may be frozen in small portions.
