Ingredients
  

  • Butter for the baking dish
  • 1 pound ground chorizo, Mexican-style fresh
  • ½ cup finely chopped onion
  • ½ cup chopped green bell pepper, or a combination of red and green
  • 2 cups shredded cheddar jack cheese
  • 10 large eggs
  • 1 tsp chili powder
  • 1 tsp ground cumin
  • 1 tsp kosher salt
  • ½ tsp garlic powder
  • ½ tsp ground black pepper
  • Salsa (optional), for serving
  • Cilantro (optional), for garnish

Instructions

  • Measure the ingredients and have everything at hand.

  • Heat the oven to 375°F (190°C) and grease a 9-by-13-inch baking dish.

  • Cook the chorizo in a large skillet over medium heat for 4 minutes without disturbing. Add the onion and peppers and sauté, stirring frequently, for 4 to 5 minutes or until the meat is no longer pink and the onions are softened. Tilt the pan and spoon off excess fat.

  • Transfer the chorizo mixture to the prepared baking dish and top with the cheese.

  • Combine the eggs, chili powder, cumin, salt, garlic powder, and black pepper in a mixing bowl. Beat with an electric mixer or whisk until smooth. Pour over the cheese and chorizo filling.

  • Transfer the baking dish to the oven; bake for 20 to 25 minutes or until set.
