These easy black beans are slow cooked to perfection with spicy tomatoes, peppers, and Tex-Mex seasonings.

Ingredients
  

  • 2 (15-ounce) cans black beans, drained
  • 1 (14.5-ounce) can diced fire-roasted tomatoes, or zesty chili style, with juice
  • 1 (4-ounce) can mild green chile, (4-ounce) chopped
  • 1 cup chopped onion
  • 2 cloves garlic, finely minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • ½ teaspoon dried leaf oregano
  • ¼ teaspoon crushed red pepper, or to taste
  • ½ teaspoon salt, or to taste
  • ¼ teaspoon ground black pepper
  • 1 tablespoon chopped cilantro, optional

Instructions

  • Combine drained black beans, fire roasted tomatoes, chile, onion, garlic, cumin, chili powder, oregano, red pepper, salt, and pepper in the slow cooker insert.
  • Cover and cook on LOW for 4 to 5 hours.
  • Stir the cilantro into the beans just before serving.
