Ingredients
  

  • 1 large onion, quartered and sliced
  • 1 beef brisket, about 4 pounds, trimmed
  • 1/2 teaspoon ground black pepper
  • 3/4 cup beer
  • 1/2 cup ketchup
  • 2 tablespoons liquid smoke
  • 1 tablespoon brown sugar, light, packed
  • 2 teaspoons Worcestershire sauce
  • 2 cloves garlic, minced
  • 3 tablespoons flour whisked into 2 to 3 tablespoons water

Instructions

  • Put onions into the crockery insert of a slow cooker. Cut the brisket into 2 or 3 pieces and place it on the onions. Sprinkle with the pepper.
  • Combine the beer, ketchup, liquid smoke, brown sugar, Worcestershire sauce, and garlic; pour over the meat. Cover and cook on high for 4 to 6 hours, or cook on low for 8 to 10 hours.
  • Remove the beef to a serving platter.
  • Add the flour-water mixture to the juices in the slow cooker. Cook, uncovered, on high for about 5 to 8 minutes or until thickened.
  • Serve the brisket sliced with the thickened sauce.
