Slow Cooker Barbecued Beef

Ingredients
  

  • 1 cup onion, chopped
  • 1 (3-pound) chuck roast
  • ½ cup cola or Dr. Pepper
  • 2 tbsp Worcestershire sauce
  • ½ tsp garlic powder
  • ¼ tsp ground black pepper
  • 1 tbsp cider vinegar
  • 1 cup barbecue sauce, divided

Instructions

  • Put the chopped onion in the crockery insert of a slow cooker (3 1/2- to 6-quart size). Cut the roast into 2 pieces and place on the onion layer. Combine the cola, Worcestershire sauce, garlic powder, black pepper, vinegar, and ½ cup of the barbecue sauce. Pour the mixture over the roast. Refrigerate the remaining barbecue sauce; you’ll use it later.

  • Cover the slow cooker; cook the beef on LOW for 7 to 9 hours, or until the roast is tender enough to shred easily. Remove the beef from the slow cooker and pour the cooking juices into a fat separator. Set the defatted juices aside.
  • Tip: Save a small amount of the cooking liquid before discarding it in case you want to loosen the shredded beef.
  • Shred the meat with two forks. Return the meat to the slow cooker and stir in the remaining barbecue sauce. Add a little of the reserved cooking juice, if needed, to moisten the beef. Cover and cook on HIGH for 10 to 15 minutes, until hot and bubbly.

  • Serve the beef on toasted sandwich buns with your favorite salads, slaw, and baked beans.
