Ingredients
  

  • 1 cup unsalted butter
  • 1 cup granulated sugar
  • 1 cup brown sugar, firmly packed
  • 2 eggs, beaten
  • 1 teaspoon vanilla
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 cups quick-cooking oats
  • 2 cups corn flakes
  • 1 cup coconut, sweetened flaked
  • 1 cup semisweet chocolate chips, or milk chocolate
  • 1/2 cup chopped pecans, optional
  • powdered sugar

Instructions

  • Heat the oven to 350 F.
  • Line cookie sheets with parchment paper or silicone baking mats. Alternatively, lightly grease the pans.
  • In a mixing bowl with an electric mixer, beat the butter with the granulated and brown sugars. Blend in the eggs, one at a time, beating well after each addition. Add the vanilla and blend well.
  • In a separate bowl, combine the flour, baking soda, baking powder, and salt.
  • Add the dry ingredients to the first mixture; blend well.
  • Stir in the rolled oats, corn flakes, coconut, chocolate chips, and pecans.
  • Shape the dough into balls about 1 inch in diameter. Roll the dough balls in powdered sugar and arrange on the baking sheet.
  • Gently press the balls of dough down with the tines of a fork.
  • Bake the cookies for 12 to 15 minutes, or until set and lightly browned on the bottoms.
  • The recipe makes about 5 dozen ranger cookies.
