  • 8 ounces sliced mushrooms
  • ½ cup chicken stock
  • 2 tbsp dry white wine, or more stock

Instructions

  • Heat the oven to 350°F and spray a shallow 2-quart baking dish with cooking spray.
Cooking spray for the baking dish
  • Heat the olive oil in a skillet over medium heat.
    2 tbsp olive oil
  • Pat the pork chops with paper towels to dry. Season them all over with salt, garlic powder, and pepper.
4 pork chops | 1/2 tsp kosher salt | 1/2 tsp garlic powder | 1/4 tsp black pepper
  • When the oil is shimmering, add the chops. Cook for about 2 minutes on each side, or until browned.
  • Remove the chops to a baking dish and set aside.
  • Add another 1 tablespoon of olive oil to the same skillet and add the chopped onion and mushrooms. Sauté for about 3 to 5 minutes, or until the onion is translucent and the mushrooms are browned.
1 tbsp olive oil | 1 small onion | 8 ounces sliced mushrooms
  • Add the chicken stock and wine to the skillet; stir to combine and bring to a boil, scraping up any browned bits in the bottom of the pan.
1/2 cup chicken stock | 2 tbsp dry white wine
  • Remove the pan from the heat and whisk in the dressing and mustard. Taste and adjust the seasonings.
3 tbsp ranch dressing | 1 1/2 tbsp Dijon mustard
  • Pour the mushroom-and-sauce mixture over the pork chops.
  • Bake the pork chops for 20 to 30 minutes or until the pork reaches an internal temperature of at least 145 F.
