This quick vanilla snack cake is remarkably fast and easy to throw together and bake! The 8-inch cake is finished with a delicious melted chocolate chip glaze.

  • Preheat the oven to 350°F and spray an 8-inch square baking pan with baking spray.

  • Add the flour, sugar, baking powder, and salt to the pan.
    1 1/4 cups all-purpose flour | 1 cup granulated sugar | 1 1/2 tsp baking powder | 1/2 tsp fine salt
  • In a small bowl, whisk together the egg and vanilla.
    1 large egg | 1 1/2 tsp vanilla extract
  • Make 2 small wells in the flour mixture; pour oil in one and egg and vanilla mixture in other.
    1/3 cup vegetable oil
  • Add the milk and stir until well blended. Fold in the pecans, if using.
    3/4 cup milk | 1/4 cup chopped pecans
  • Bake the cake in the preheated oven for 25 to 35 minutes, or until a wooden pick inserted in center comes out clean.
  • Remove the cake to a rack and immediately sprinkle the chocolate chips over the top. Let the chocolate chips stand for 2 minutes, until softened, then use a spatula or knife to swirl them over the cake, creating the glaze.
