Purple Slaw With Cilantro Lime Dressing

This easy purple slaw is the perfect topping for shrimp or fish tacos. It's great on chicken tacos, too!

Ingredients
  

  • ½ head red cabbage, small
  • ¼ head green cabbage, small
  • 1 small carrot
  • 4 green onions
  • 2 tbsp chopped cilantro
  • cup lime juice, about 2 to 3 limes
  • 3 tsp sugar
  • ¼ cup peanut oil, or a neutral oil
  • salt and pepper, to taste
  • ½ to 1 tsp chili garlic paste, or to taste

  • Shred the red and green cabbage and toss them together in a large bowl.
    1/2 head red cabbage | 1/4 head green cabbage
  • Shred the carrot and chop the green onions; add them to the cabbage mixture along with the chopped cilantro.
    1 small carrot | 4 green onions | 2 tbsp chopped cilantro
  • In another bowl, combine the lime juice, sugar, peanut oil, salt and pepper, to taste, and chili garlic paste, if using. Whisk to blend. Gradually add the dressing to the vegetables and toss to coat.
    1/3 cup lime juice | 3 tsp sugar | 1/4 cup peanut oil | salt and pepper | 1/2 to 1 tsp chili garlic paste
  • Cover and refrigerate until thoroughly chilled.
