  • Whisk the milk with the pumpkin, eggs, brown sugar, vanilla extract, cinnamon, and nutmeg in a medium bowl.
    1/2 cup milk | 1/2 cup pumpkin purée | 4 large eggs | 2 tbsp brown sugar | 1 tsp vanilla extract | 1 tsp ground cinnamon | 1/4 tsp ground nutmeg
  • Pour the pumpkin and egg mixture into a wide, shallow bowl.
  • Melt a few teaspoons of butter in a large nonstick skillet or griddle over medium heat.

  • Soak a 2 to 4 slices of bread (depending on the size of your griddle) in the pumpkin mixture for a few seconds, turning to coat both sides.

  • When the butter is foaming, arrange the soaked bread on the griddle.
  • Cook the soaked bread until browned on the bottom. Turn and brown the other side. This will take about 2 to 3 minutes on each side.
  • Transfer the French toast to a plate and place it in a low oven or on a warming tray to keep warm while you make subsequent batches.
