Pork Marengo

Ingredients
  

  • 1 ½ pounds boneless pork chops (about 1/2-inch thick)
  • Kosher salt and freshly ground black pepper, to taste
  • 2 tbsp all-purpose flour
  • 2 tbsp olive oil, divided
  • 1 cup chopped onion
  • 8 ounces sliced mushrooms
  • ½ tsp minced garlic
  • 2 tbsp tomato paste
  • 1 small green or red bell pepper, cut into 1/4-inch strips
  • ½ cup dry white wine
  • 1 (14.5-ounce) can diced tomatoes
  • ½ cup chicken broth
  • Chopped parsley (optional), for garnish

Instructions

  • Prep and Sear the Pork: Sprinkle the pork chops with salt and pepper, then dredge them in flour. Heat 1 tablespoon of olive oil in a large skillet over medium-high. When the oil is shimmering, add the pork chops and cook for 2 to 3 minutes on each side or until browned. Transfer the chops to a plate and set aside.

  • Sauté the Vegetables: Heat another tablespoon of olive oil in the same skillet over medium heat. Add the onion and mushrooms to the pan and cook for 4 to 5 minutes or until the onions are translucent. Add the tomato paste and bell pepper, and cook, stirring, for 2 minutes. Then add the garlic and cook for about 30 seconds, until fragrant.

  • Make the Sauce: Add the white wine to the vegetables in the skillet, scraping the bottom of the pan to release the browned bits. Bring to a boil, reduce the heat to medium-low, and cook for about 30 seconds. Add the diced tomatoes and chicken broth; continue to cook, stirring occasionally, for 2 minutes to allow the sauce to reduce slightly.

  • Finish the Dish: Add the pork chops back to the skillet and simmer for 5 to 8 minutes or until the sauce is slightly thickened and the chops reach 145°F.
  • Tip: If the sauce thickens too much, add a splash of broth.
  • Serve: Transfer the chops and sauce to a serving platter and top with parsley. Serve along with rice, pasta, or potatoes.
