100 grams granulated sugar

vanilla extract or vanilla paste

Prevent your screen from going dark
In a mixer with whisk attachment, beat the egg whites on high speed until foamy.
Add the cream of tartar and a pinch of salt and continue beating at high speed.
When the whites are opaque, with the mixer still running, begin adding the sugar, 1 tablespoon at a time.
Once all of the sugar is incorporated, add the vanilla and continue beating to stiff peaks.
Check for stiff peaks by lifting the beater. The peaks should be sturdy and glossy, standing on their own.
Follow the baking instructions for your pie.
Notes
Note: Eating raw or undercooked eggs can pose a risk for food-borne illness. Cook the meringue topping for at least 15 minutes at 350 F.
