Ingredients
  

  • 3 large egg whites, room temperature approx. 100 grams
  • 1/4 teaspoon cream of tartar
  • Pinch salt
  • 1/2 cup granulated sugar, (100 grams)
  • 1/4 teaspoon vanilla extract or vanilla paste

Instructions

  • In a mixer with whisk attachment, beat the egg whites on high speed until foamy.
  • Add the cream of tartar and a pinch of salt and continue beating at high speed.
  • When the whites are opaque, with the mixer still running, begin adding the sugar, 1 tablespoon at a time.
  • Once all of the sugar is incorporated, add the vanilla and continue beating to stiff peaks.
  • Check for stiff peaks by lifting the beater. The peaks should be sturdy and glossy, standing on their own.
  • Follow the baking instructions for your pie.

Notes

Note: Eating raw or undercooked eggs can pose a risk for food-borne illness. Cook the meringue topping for at least 15 minutes at 350 F.
