Pepper Steak and Noodles

Ingredients
  

  • ¼ cup butter
  • 1 ½ pounds beef sirloin, sirloin tip or round, cut in thinly sliced 2-inch strips
  • Kosher salt and freshly ground black pepper, to season the beef
  • 1 medium onion, sliced
  • 1 ½ green bell peppers, cut into strips
  • ½ teaspoon minced garlic
  • 1 (14.5-ounce) can diced tomatoes, with juice
  • 1 beef bouillon cube , or equivalent granules or base
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • 2 tablespoons soy sauce
  • 1 teaspoon sugar
  • ½ teaspoon fine salt
  • 6 ounces wide noodles
  • 1 cup shredded cheddar cheese

Instructions

  • Melt the butter in a large skillet over medium heat; add beef strips and sprinkle with kosher salt and freshly ground black pepper. Sauté, stirring occasionally, until the meat is browned.
  • Remove the meat from the skillet; add the onion and green bell pepper to the skillet and sauté for 2 minutes. Add the minced garlic and cook for 1 minute longer.
  • Return the meat to the skillet, along with the tomatoes and a bouillon cube. Cover and simmer for 5 minutes.
  • Whisk the cornstarch with the water, soy sauce, sugar, and salt. Add to the meat mixture and cook, stirring constantly, until thickened. Reduce the heat and cook for 2 minutes longer.
  • Meanwhile, cook noodles following the package directions; drain.
  • Toss the hot noodles with the shredded cheddar cheese. Serve pepper steak with the cheddar noodles.
