Ingredients

  • ¼ cup butter
  • 1 ½ pounds beef sirloin
  • 1 medium onion
  • 1 ½ green bell peppers
  • ½ clove garlic
  • Kosher salt and freshly ground black pepper, to season the beef
  • 1 (14.5-ounce) can diced tomatoes, with juice
  • 1 tsp beef base or a bouillon cube
  • 1 tbsp cornstarch
  • 2 tbsp water
  • 2 tbsp soy sauce
  • 1 tsp sugar
  • ½ tsp fine salt
  • 6 ounces wide noodles
  • 1 cup shredded cheddar cheese

Recommended Equipment

Instructions

  • Slice the beef into thin, 2-inch to 3-inch strips. Halve and slice the onion, and slice the green bell pepper into strips. Mince the garlic.
    1 1/2 pounds beef sirloin | 1 medium onion | 1 1/2 green bell peppers | 1/2 clove garlic
  • Melt the butter in a large skillet over medium heat; add beef strips and sprinkle with kosher salt and freshly ground black pepper. Sauté, stirring occasionally, for 4 to 5 minutes or until the meat is browned.
1/4 cup butter | Kosher salt and freshly ground black pepper
  • Remove the meat from the skillet; add the onion and green bell pepper to the skillet and sauté for 2 minutes. Add the minced garlic and cook for 1 minute longer.
  • Return the meat to the skillet, along with the tomatoes and the beef base or bouillon cube. Cover and bring to a simmer. Reduce the heat to low and simmer gently for 3 minutes.
1 (14.5-ounce) can diced tomatoes | 1 tsp beef base or a bouillon cube
  • Whisk the cornstarch with the water, soy sauce, sugar, and salt. Add to the meat mixture and cook, stirring constantly, until thickened. Reduce the heat and cook for 2 minutes longer.
    1 tbsp cornstarch | 2 tbsp water | 2 tbsp soy sauce | 1 tsp sugar | 1/2 tsp fine salt
  • Meanwhile, cook noodles following the package directions; drain.
    6 ounces wide noodles
  • Toss the hot noodles with the shredded cheddar cheese and serve topped with the pepper steak.
    1 cup shredded cheddar cheese
  • Tip: Toss the cheese with very hot, freshly drained noodles so it softens and coats the pasta more evenly. If the noodles cool down too much, the cheese may clump instead of melting.
