Peanut Butter Cupcakes

  • Preheat the oven to 350°F and grease and flour 18 cupcake cups or line with cupcake papers.
    Butter and flour or baking spray (or paper liners)
  • Combine the flour, baking powder, and salt in a bowl; whisk to blend.
    2 1/2 tsp baking powder | 2 cups all-purpose flour | 1/2 tsp fine salt
  • In a mixing bowl, using an electric mixer, beat the butter, brown sugar, and peanut butter until light and fluffy. Beat the eggs and vanilla into the creamed mixture.
    1/2 cup unsalted butter | 1 1/3 cups light brown sugar | 1/2 cup creamy peanut butter | 2 large eggs | 1 tsp vanilla extract
  • Add the dry ingredients to the first mixture, alternating with the milk. Blend until smooth.
    3/4 cup milk
  • Fill the prepared cupcake cups about 2/3 to 3/4 full. Bake for 23 to 27 minutes, or until a wooden toothpick inserted in the center comes out clean.
