  • Heat the oven to 350°F and lightly butter a 2-quart baking dish.
    Butter
  • Add 1 tablespoon of salt to a large pot of water and bring it to a boil over high heat. Add the macaroni and cook according to the package directions. Drain the macaroni, return it to the pot, and toss it with the butter.
    1 tbsp kosher salt for the cooking water | 8 ounces elbow macaroni | 2 tbsp butter
  • Reserve 1/2 cup of cheese and set it aside.
  • Layer one-third of the macaroni in the baking dish, then top with half of the remaining cheese. Repeat once, then top with the remaining macaroni.
    2 cups shredded cheddar cheese
  • In a bowl, combine the evaporated milk, egg, dry mustard, 1 teaspoon of salt, and ground black and cayenne peppers. Pour over the casserole.
    3/4 cup evaporated milk | 1 large egg | 1 tsp dry mustard | 1 tsp fine salt | Dash ground black pepper | Dash cayenne pepper
  • Sprinkle with the reserved 1/2 cup of cheese and bake the casserole for 30 minutes, until hot and bubbly.
    ½ cups shredded cheddar cheese
  • Let the casserole rest for 5 to 10 minutes before serving so it sets up a bit and is easier to scoop.
