Okra and tomatoes make a mouthwatering combination in this easy-to-make side dish. Try it with your favorite protein or as a standalone meal.

Ingredients
  

  • 4 strips bacon
  • ½ cup chopped onions
  • 1 ½ pounds okra, washed and sliced into 1/2-inch thick rounds
  • 4 large tomatoes, seeded and diced
  • 1 ½ tsp kosher salt, or to taste
  • ¼ tsp freshly ground black pepper, or to taste
  • 1 pinch crushed red pepper flakes (optional)
  • Chopped fresh parsley (optional)

Instructions

  • Arrange the bacon in a large skillet and cook over medium heat until crisp. Using a slotted spoon, transfer the bacon to paper towels to drain.

  • Add the chopped onions to the skillet and cook for 5 minutes or until translucent. Add the okra, tomatoes, salt, pepper, and crushed red pepper flakes, if using; stir to combine and simmer for 20 minutes or until the okra is tender. Taste and adjust the seasonings.

  • Transfer the okra and tomatoes to a serving dish. Crumble the bacon and sprinkle it over the dish.
  • Garnish with parsley if desired, and serve immediately.
