Mujadara (Lentils and Rice)

Ingredients
  

  • 3 tbsp olive oil, divided
  • 3 medium yellow onions, diced
  • 1 cup lentils, brown or green
  • 3 ½ cups cold water
  • 1 cup basmati rice
  • 2 tsp salt

For the Topping

  • 2 medium yellow onions, sliced into rings

  • Heat 2 tablespoons of olive oil in a large, heavy skillet over medium heat and add the diced onions. Cook, stirring frequently, for 10 to 15 minutes until browned and caramelized. Lower the heat and add small amounts of water as needed to keep the onions from scorching. Remove the onions to a bowl or plate and set aside. Set the skillet aside—you'll use it in a later step.
    2 tbsp olive oil | 3 medium yellow onions, diced
  • Combine the lentils and water in a large saucepan. Bring to a boil, then reduce the heat to low, cover the pan, and simmer for 15 minutes.
    1 cup lentils | 3 1/2 cups cold water
  • Add the cooked diced onion to the lentils, along with the rice and salt. Cover and simmer for 15 to 20 minutes, until the rice is tender. Remove from heat and let stand for 5 minutes.
    1 cup basmati rice | 2 tsp salt
  • Meanwhile, heat the remaining 1 tablespoon of oil in the skillet over medium heat and add the sliced onion rings. Cook, stirring frequently, for 10 to 15 minutes, until softened and browned. Lower the heat and add small amounts of water as needed to keep the onions from scorching.

  • Transfer the rice and lentils to a serving bowl and top with the sautéed sliced onions.
