  • Butter or baking spray, for greasing the pan

For the Crust

For the Caramel

  • ½ cup unsalted butter
  • ½ cup packed light brown sugar
  • 2 tbsp corn syrup or Lyle's Golden Syrup
  • 1 (14-oz) can sweetened condensed milk
  • 1 pinch fine salt
  • 1 tsp vanilla

For the Topping

  • cup semisweet chocolate chips or 4 ounces chopped semisweet chocolate
  • 1 tbsp neutral oil

Recommended Equipment

Instructions

  • Preheat the oven to 350°F and grease an 8-inch square pan.
    Butter or baking spray
  • In a large bowl, combine the flour, 1/2 cup sugar, 1/4 teaspoon of salt, and 7 tablespoons of softened unsalted butter until crumbly. Press into the prepared baking pan.
    1 1/3 cups all-purpose flour | 1/4 tsp fine salt | 1/2 cup granulated sugar | 7 tablespoons unsalted butter
  • Bake the shortbread for 18 to 22 minutes or until golden brown. Cool completely.
  • In a heavy saucepan, melt 1/2 cup of unsalted butter with the brown sugar. Add the corn syrup or golden syrup, sweetened condensed milk, and a pinch of salt. Bring to a boil and cook for about 12 minutes, stirring constantly, until the mixture turns a rich medium caramel brown. Do not let the mixture scorch.
1/2 cup unsalted butter | 2 tbsp corn syrup or Lyle's Golden Syrup | 1 (14-oz) can sweetened condensed milk | 1 pinch fine salt | 1/2 cup packed light brown sugar
  • Tip: A dairy-based caramel is notorious for scorching, so make sure to stir it constantly. A heavy-bottomed saucepan is essential.
  • When it's very thick and just begins to stick to the bottom of the pan as you stir, it's time to remove from the heat; add the vanilla. Stir to blend and pour over the crust.
    1 tsp vanilla
  • Melt chocolate chips or chopped semisweet chocolate with 1 tablespoon of neutral oil in a heatproof bowl over simmering water; spread over the caramel layer. Chill until set and cut into squares.
2/3 cup semisweet chocolate chips or 4 ounces chopped semisweet chocolate | 1 tbsp neutral oil
  • Tip: Once the chocolate is mostly set (about 20 to 30 minutes), use a sharp knife to score the chocolate where you plan to cut the squares. Don't cut all the way through. This will keep the chocolate from cracking when you cut the bars.
