Mexican Cauliflower Rice

This Mexican Cauliflower Rice is a quick, low-carb side made with cauliflower rice, salsa, green onions, and taco seasoning. It’s ready in under 15 minutes and pairs perfectly with tacos, burritos, or grilled meats.

Ingredients
  

  • 2 cups cauliflower rice, fresh* or frozen
  • 1 tbsp vegetable oil
  • 2 to 3 green onions
  • 1 clove garlic, finely minced
  • ¾ cup salsa, thick and chunky
  • 2 tsp taco seasoning
  • Fine salt and freshly ground black pepper, to taste

Instructions

  • Cook the cauliflower rice as needed (see notes) until tender and hot. Set aside.

  • Slice the green onions thinly, keeping the dark green tops separated from the white and light green parts.

  • Heat 1 tablespoon of vegetable oil in a skillet over medium heat. Add the sliced white and light green parts of the green onions. Cook for about 2 minutes, stirring constantly. Add the garlic and continue cooking for 1 to 2 minutes, stirring constantly.

  • Add the hot cauliflower rice, salsa, taco seasoning, and the sliced green onion tops. Taste and add salt and pepper, as needed. Stir to combine and heat through.

Notes

*To rice fresh cauliflower, grate it on a box grater or use a food processor with the grating blade.
Cook the frozen cauliflower rice according to the package directions. If you are using fresh cauliflower rice, sauté it in a skillet over medium heat with about 1 tablespoon vegetable oil for 5 minutes, stirring frequently. Alternatively, microwave the cauliflower rice in a microwave-safe container, adding a splash of water. Cover with a damp paper towel and microwave on high for 3-5 minutes.
