Ingredients
  

  • 8 to 10 cups cubed butternut squash, (about 3 pounds)
  • 6 tbsp unsalted butter
  • 1 ½ cups water, (more if needed)
  • ¾ tsp kosher salt , or to taste
  • 1 to 2 tbsp brown sugar (optional)
  • Freshly ground black pepper to taste

  • Peel the squash, cut it into 1/2-inch cubes, and add it to a large pot. Add the butter, 1 1/2 cups of water, and 3/4 teaspoon of kosher salt. Bring to a simmer over medium-high heat. Turn the heat to medium-low, cover the pan, and cook, covered, for 30 to 45 minutes or until the squash is tender. Check occasionally and add more water if necessary. Add the brown sugar (if using) and cook until the sugar dissolves. If excess liquid remains, cook uncovered for a few minutes longer.

    Butternut squash cubes are butter-poached with unsalted butter and water until softened.
  • Using a potato masher or immersion blender, mash the squash until smooth, adding salt and pepper to taste and brown sugar, if desired. If the mash is very thick, add a bit more water to loosen it up.
    Freshly ground black pepper to taste
    Use a masher or immersion blender to mash the butternut squash.
