Maple Mashed Sweet Potatoes

Maple syrup adds sublime flavor to these mashed sweet potatoes. This is a super easy dish to prepare, and it's lighter than the typical sweet potato casserole.

Ingredients
  

  • 2 pounds sweet potatoes
  • 1 teaspoon salt, plus more, to taste
  • 3 tablespoons butter
  • 2 to 3 tablespoons maple syrup
  • Cinnamon, to taste, optional
  • 4 tablespoons half-and-half, or use light cream or milk

Instructions

  • Peel the sweet potatoes and cut them into chunks. Place them in a saucepan and cover with water and add 1 teaspoon of salt. Bring the potatoes to a boil over high heat. Cover the pan and reduce the heat to medium-low. Cook for about 20 minutes, or until the sweet potatoes are tender. Drain thoroughly.
  • Transfer the sweet potatoes to a large bowl and add the butter. Mash and then stir in the maple syrup and some cinnamon, if desired.
