Maple syrup adds sublime flavor to these mashed sweet potatoes. This is a super easy dish to prepare, and it's lighter than the typical sweet potato casserole.

Ingredients
  

  • 2 pounds sweet potatoes
  • 2 tsp kosher salt, for the sweet potato cooking water
  • 3 tbsp butter
  • 3 tbsp maple syrup
  • 4 tbsp half-and-half, or use light cream or milk
  • Fine salt, to taste
  • 1 dash cinnamon (optional), or to taste

  • Peel the sweet potatoes and cut them into chunks. Place them in a saucepan, cover with water, and add 2 teaspoons of kosher salt. Bring the potatoes to a boil over high heat. Cover the pan and reduce the heat to medium-low. Cook for about 20 minutes, or until the sweet potatoes are fork-tender. Drain thoroughly.

  • Transfer the sweet potatoes to a large bowl and add the butter. Mash and then stir in the maple syrup and half-and-half. Season with salt and add a dash of cinnamon, if desired.
