Low Carb Cauliflower "Macaroni and Cheese"

Ingredients
  

  • Butter for the baking dish
  • 1 large cauliflower, about 2 pounds
  • cup heavy cream
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded sharp cheddar cheese
  • 1 tsp ground mustard powder
  • ½ tsp garlic powder
  • ½ cup milk, plus more as needed
  • Kosher salt and freshly ground black pepper, to taste
  • ½ cup mild cheddar cheese or combination of sharp cheddar and mozzarella (optional), for topping

Instructions

  • Heat the oven to 400°F and butter a 2 1/2-quart baking dish.

  • Cut the cauliflower into small florets.

  • Place a steaming basket in a large saucepan and add about an inch of water. Add the cauliflower and bring the water to a boil. Cover and cook for about 6 to 9 minutes, or until the cauliflower is tender. Drain very well to avoid a watery casserole. Set aside.
  • Meanwhile, heat the cream in a medium saucepan over medium-low heat. Add the cheese, mustard powder, and garlic powder. Stir until the cheese has melted. Stir in 1/2 cup of milk. Taste and season with kosher salt and freshly ground black pepper, to taste.

  • Combine the sauce with the cauliflower, adding more milk if needed for a creamier consistency; transfer to the prepared baking dish and bake for 15 to 20 minutes, or until hot and bubbly.
  • If desired, sprinkle with the mild cheddar cheese or a combination of sharp cheddar and mozzarella and broil for about 2 minutes or until the cheese has melted and browned slightly.
