Light Garlic Shrimp Scampi

This great-tasting garlic shrimp is lighter than the usual shrimp scampi combination. It's made with less butter and olive oil but plenty of garlic.

Ingredients
  

  • 2 teaspoons olive oil
  • 1 tablespoon butter
  • 6 cloves garlic, very thinly sliced or minced
  • 1 medium dried bay leaf
  • 1 1/2 pounds shrimp, large, peeled and deveined
  • 1/4 teaspoon salt
  • dash freshly ground black pepper
  • dash cayenne pepper
  • 2 tablespoons chopped fresh parsley
  • 1 lemon, sliced or cut into wedges

Instructions

  • Heat the olive oil and butter in a large skillet over medium heat.
  • When the butter has melted and the olive oil is shimmering, add the sliced garlic and bay leaf. Cook, stirring, for 2 minutes.
  • Add the shrimp to the pan and cook until the shrimp is opaque, about 5 to 7 minutes. Remove the pan from heat the and add salt, pepper, and cayenne. Toss with chopped fresh parsley and serve with lemon slices or wedges.
