Ingredients
  

  • 1 tablespoon butter
  • 2 cups onions, sliced
  • 1 teaspoon sugar
  • 3 cups mashed potatoes, seasoned
  • 8 slices roast beef, pot roast pork roast, or meatloaf
  • 1 cup peas, frozen, thawed
  • 2 cups beef gravy, about 10 1/2 ounces, or 1 cup leftover gravy
  • 1/4 cup cheddar cheese, shredded mild

Instructions

  • Heat the oven to 375°F and grease a 2-quart baking dish.
  • Heat the butter in a large nonstick skillet over medium heat. Add the onions, sprinkle with sugar, and cook until they begin to brown. Continue to cook, stirring, for 7 minutes, until tender.
  • Spread half of the mashed potatoes in the baking dish. layer with the meat, onions, peas, and gravy, in that order. Top with the remaining mashed potatoes.
  • Bake the casserole for 30 minutes.
  • Sprinkle shredded cheese over the potato topping and return the casserole to the oven for 5 to 10 minutes, until the topping is lightly browned and the cheese is melted.
