Instructions

Heat the oven to 400 F.
Grease a 9-inch pie plate.
In a heavy skillet, cook the ground beef and onion over medium heat, stirring occasionally. Drain. Add the taco seasoning and stir to blend; spread in the pie plate. Top with the green chiles and about half of the chopped tomatoes.
Combine the biscuit mix, milk, and eggs in a mixing bowl; stir until well blended. Pour the batter over the beef mixture. If desired, top with a few slices of tomatoes.
Bake for about 25 minutes, or until a knife inserted in the center comes out clean.
Sprinkle with the shredded cheese. Bake for a few more minutes, until cheese is melted.
Serve with salsa, sour cream, and chopped green onions, if desired.
