Homemade Pimento Cheese

Ingredients
  

  • 2 cups shredded sharp cheddar cheese, (8 ounces)
  • 4 ounces cream cheese, softened
  • ¼ cup mayonnaise, or more if you like it creamier
  • 1 (4-ounce) jar chopped pimentos, drained
  • ½ tsp onion powder
  • ¼ tsp garlic powder
  • ¼ tsp freshly ground black pepper
  • Fine salt, to taste

Instructions

  • Mix: Combine the cheese, cream cheese, mayonnaise, pimentos, onion powder, garlic powder, and freshly ground black pepper in a large mixing bowl. Mix by mashing with a fork or spoon, or beat with an electric mixer. Taste and adjust the seasonings with salt if needed. Cover and chill until serving time.

  • Tip: Shred your own cheddar. Pre-shredded is convenient, but freshly shredded cheese usually gives a creamier, smoother spread.
  • Serve: Serve as a spread or dip with crackers or veggie dippers.
