These glazed carrots make an excellent side dish for an everyday meal, and they're special enough for a holiday dinner. Use sorghum syrup, molasses, honey, maple syrup, or golden syrup in this recipe.

  • Peel the carrots with a vegetable peeler. Slice them diagonally into 1/4-inch rounds.
    6 medium carrots
  • Transfer the carrots to a medium saucepan. Cover with water and bring to a boil. Reduce the heat and cover the pan. Continue cooking for about 6 to 7 minutes, or until the carrots are just barely tender.
  • Drain the carrots well and return them to the saucepan. Add the butter, brown sugar, honey, salt, ginger, allspice, and lemon juice. Bring to a simmer over medium heat, stirring until the butter melts and the sugar dissolves, about 2 to 3 minutes. Stir to coat the carrots.
    3 tbsp butter | 1 tbsp brown sugar | 1/4 cup honey | 1/4 tsp salt | 1/4 tsp ground ginger | 1/4 tsp ground allspice | 1 tbsp fresh lemon juice
  • Simmer the carrots, stirring frequently, for about 5 to 7 minutes, or until the carrots are tender and coated with the syrupy glaze.
