Glazed Acorn Squash Rings

Ingredients
  

  • 2 large acorn squash
  • 1/2 cup orange juice
  • 1/2 cup firmly packed light brown sugar
  • 1/4 cup light corn syrup
  • 1/2 cup melted butter
  • 2 to 3 teaspoons grated orange zest
  • 1/4 teaspoon salt

Instructions

  • Preheat the oven to 350 F.
  • Butter a large, shallow baking pan.
  • Trim ends from squash; cut crosswise into 1/4-inch thick rounds. Remove any seeds and membranes. Arrange the rings in the baking pan.
  • Add orange juice to the squash rings in the baking pan.
  • Cover the pan with foil and bake the squash for 30 minutes.
  • In a bowl, combine the brown sugar, corn syrup, melted butter, orange zest, and salt; pour over squash rings.
  • Continue baking, uncovered, for about 15 to 20 minutes, and basting occasionally until acorn squash is tender and nicely glazed.
