Ingredients
  

  • Butter or baking spray, for the pan
  • 1 cup (128 grams) flour
  • ¾ cup (60 grams) unsweetened cocoa
  • ¾ tsp fine salt
  • ½ tsp baking powder
  • 3 large eggs
  • 1 cup packed brown sugar, light or dark
  • ¾ cup granulated sugar
  • 2 tsp vanilla extract
  • 12 tbsp (6 ounces) melted unsalted butter
  • ¾ to 1 cup chopped pecans or walnuts
  • ¾ cup chocolate chips (optional)

Instructions

  • Butter a 9-inch baking pan or spray it with baking spray, then line it with parchment paper, leaving an overhang if desired. Heat the oven to 350°F.

  • Tip: Leaving 2 to 3 inches of parchment overhang on two sides creates a sling, making it easy to lift the brownies out of the pan after they have cooled completely. Grease the pan first so the parchment stays in place.
  • Measure or weigh the flour and cocoa, then sift them together into a bowl. Add the salt and baking powder, stirring to blend; set aside.

  • In a mixing bowl with an electric mixer, beat the eggs with both sugars until smooth. Beat in the vanilla. With the mixer on low, gradually beat in the melted butter.

  • Add the dry ingredients and stir to blend. Fold in the nuts and chocolate chips, if using.

  • Spoon the batter into the pan and spread it evenly.
  • Bake the brownies in the preheated oven for 30 to 35 minutes, until set and a toothpick inserted into the center comes out with a few crumbs. If it comes out with wet batter, leave them in a little longer.
  • Cool the brownies in the pan for at least 1 hour.
  • Tip: For clean slices, cool the brownies completely and use a sharp knife and wipe the blade with a warm, wet cloth between cuts.
