Fresh Tomatoes With Red Wine Vinaigrette

The red wine vinaigrette doesn't disguise the fabulous flavor of these fresh tomatoes. Use fresh basil and add shredded cheese if you'd like. Make your garden fresh tomatoes the highlight of your next meal!

Ingredients
  

  • 4 to 6 ripe tomatoes
  • sea salt and freshly ground black pepper
  • 3/4 cup chopped red onions
  • 1/2 cup chopped fresh parsley or basil leaves
  • 1/4 cup red wine vinegar
  • 1/2 cup extra virgin olive oil

Instructions

  • Prep the tomatoes. Wash the tomatoes and pat dry. Slice the tomatoes thickly.
  • Assemble the salad. Arrange the tomatoes on a serving plate and sprinkle with salt and pepper, chopped onions, and parsley or basil.
  • Make the vinaigrette. In a bowl, whisk the red wine and vinegar. Drizzle over the tomatoes.
