Fresh Lemon Cream Cheese Icing

Use this creamy, lemony cream cheese icing to finish a loaf cake or about 1 dozen cupcakes. It's fluffy and delicious!

Ingredients
  

  • 4 ounces cream cheese, softened
  • ½ cup butter, softened
  • 3 ½ cups confectioners' sugar
  • 2 tbsp fresh lemon juice, or more for a thinner consistency
  • 2 tsp finely grated lemon zest

Instructions

  • In a mixing bowl using an electric mixer, beat the cream cheese and butter until creamy. Add the confectioners' sugar, lemon juice, and lemon zest, and continue beating until light and fluffy. Thin with more lemon juice for a looser consistency, if desired.
