Fresh Grilled Corn Salsa

This fresh corn salsa is bright, flavorful, and perfect as a dip with tortilla chips or a topping for tacos and grilled meats. Quick to prepare and naturally healthy, this is an easy summer recipe that everyone will love!

Ingredients
  

  • 3 ears corn
  • Vegetable oil, for brushing
  • 1 medium clove garlic, grated on a microplane
  • 1 large plum tomato, seeds removed, diced
  • ¼ cup minced red onion
  • 2 to 3 tbsp finely chopped red bell pepper
  • 3 tbsp lime juice
  • 3 tbsp chopped fresh cilantro
  • 2 to 3 tbsp finely minced jalapeño, or poblano pepper
  • Salt and pepper to taste

  • Remove the husks and silk from the ears of corn. Rinse well. Brush the corn with oil and grill or broil, turning frequently, for 8 to 10 minutes or until charred in places. Transfer the hot ears of corn to a plate and rub the grated garlic over them.

  • No grill? You can char the corn directly over a gas burner flame, turning with tongs, or broil it close to the heating element for similar results.
  • In a large serving bowl, combine the diced tomato, red onion, bell pepper, lime juice, cilantro, and jalapeño or poblano pepper.

  • Cut the kernels from the cobs and add to the bowl. Toss and season with salt and pepper. Mix well and refrigerate for at least an hour before serving.
