These pancakes are light and fluffy, with just a hint of sweetness. Enjoy them as-is with butter and maple syrup, or dress them up with berries, fruit syrups, or a dollop of whipped cream.

  • In a bowl, combine the flour, sugar, salt, and baking powder; whisk to blend.
    2 cups all-purpose flour | 4 tbsp granulated sugar | 1/2 tsp fine salt | 1 tbsp baking powder
  • In another bowl, whisk together the milk, melted butter or oil, and eggs until well blended; add to the dry ingredients, stirring just until moistened. Avoid over-mixing the batter.

  • Tip: Don’t worry about a few lumps—overmixing makes pancakes tough. The batter should pour slowly from a spoon, like lava. If it seems thin, whisk in a tablespoon of flour; if it’s too thick to pour, gently stir in a splash of milk.
  • Brush a large skillet or griddle with oil; heat over medium heat. Spoon about 3 to 4 tablespoons of batter onto the skillet for each pancake. Cook until bubbles form and begin to burst around the edges, about 1 1/2 to 2 minutes. Flip carefully and cook the other side for about 1 1/2 to 2 minutes longer, or until browned.
    Vegetable oil for the pan
  • Tip: Adjust the heat as needed if the pancakes brown too quickly.
  • As the pancakes are cooked, stack them on a heated platter or baking pan. Cover loosely with foil and keep warm in a warming drawer or a preheated 200°F oven.
  • Serve the pancakes hot with butter and syrup or your favorite toppings.
