  • Place a large pot of water over high heat. Add 1 tablespoon of salt and bring the water to a boil. Add the spaghetti and cook following the package directions. Reserve about 1/4 cup of the cooking water. Drain the spaghetti and set aside.
    8 ounces spaghetti | 1 tbsp kosher salt
  • Heat the vegetable oil in a small skillet or saucepan over medium heat. Add the garlic and chili crisp and cook for 1 minute, until aromatic. Remove the pan from the heat and add the soy sauce, vinegar, brown sugar, and sesame oil.
    1 tbsp vegetable oil | 1 tsp grated garlic | 1 tsp chili crisp | 2 tbsp soy sauce | 1 1/2 tbsp rice vinegar | 1 tbsp brown sugar | 1 tbsp toasted sesame oil
  • Combine the hot, cooked spaghetti with the sauce mixture, green onions, and hot cooked peas and carrots (if using). If the mixture seems a bit dry, loosen it with some of the reserved cooking water.
    3 green onions | 1 cup frozen peas and carrots, cooked (optional)
  • Taste before serving and add more chili crisp or soy sauce if you want a bolder flavor.
  • Garnish the sesame noodles with chopped roasted peanuts or sesame seeds.
