  • Combine the sugar and cornstarch in a medium saucepan. Whisk in the vinegar and water and place over medium heat. Cook, stirring, until the mixture is thickened.
    2/3 cup granulated sugar | 2 tsp cornstarch | 1/3 cup white vinegar | 1/3 cup water
  • Add the drained sliced or diced beets and continue cooking, stirring frequently, for 15 to 20 minutes or until nicely glazed with the sauce. Add the butter, salt, and pepper to taste.
    2 (16-ounce) cans sliced or diced beets | Kosher salt and freshly ground black pepper | 3 tbsp butter
