Easy Blueberry Bundt Cake
Whip up a delectable blueberry cake using a cake mix. Quick, easy, and absolutely delicious!
Ingredients
- Butter and flour for greasing the pan
- 8 ounces cream cheese, softened
- 3 large eggs
- ½ cup neutral oil
- 2 tsp vanilla extract
- 1 tsp lemon extract (optional)
- 1 (15.25 oz) box yellow or white cake mix
- 2 cups fresh blueberries, regular or wild
Instructions
- Heat oven to 350°F (180°C) and grease and flour a fluted cake pan. Make sure you get all the nooks and crannies.Butter and flour for greasing the pan
- In a mixing bowl, combine the cream cheese, eggs, and oil. Beat until smooth and well blended. Beat in the vanilla and lemon extract, if using. Add the cake mix and beat on low to combine, then beat for 2 minutes on medium speed. - Bake for 45 to 55 minutes, until a wooden pick or skewer inserted in the center of the cake comes out clean. Let the cake cool in the pan on a rack for 15 minutes, then carefully turn it out on the rack and cool completely.
Tip: You may use canned blueberries, but make sure they are well drained.
