Ingredients
  

  • 8 large eggs
  • 3 tbsp finely chopped celery
  • 2 tbsp finely chopped red onion
  • ⅓ to ½ cup mayonnaise
  • 2 tsp lemon juice
  • 2 tsp Dijon mustard, or yellow mustard
  • ¼ tsp fine salt, or to taste
  • ¼ tsp freshly ground black pepper, or to taste

  • Fill a large bowl with ice and water. Set aside.
  • Put the eggs in a large saucepan and cover with cold water. Bring to a full boil over high heat, then cover and remove the pan from the heat. Let stand for 14 minutes, then transfer the eggs to a bowl of ice water and let them cool for 5 to 10 minutes.

  • Peel the eggs and transfer them to a bowl. Chop or mash as desired.

  • Add the celery, onion, mayonnaise, lemon juice, mustard, salt, and pepper; mix thoroughly until well blended. Taste and adjust seasonings with more salt and pepper as needed, or add more mayonnaise for a creamier texture.

  • Tip: Chop or mash based on your preference. Chunkier for texture or more mashed for a smoother sandwich filling.
