Creamy Chicken Tater Tot Casserole

Ingredients
  

  • Butter for greasing the baking dish
  • 5 tbsp unsalted butter
  • ¼ cup chopped onion
  • ¼ cup chopped celery
  • 4 tbsp all-purpose flour
  • ¼ tsp kosher salt, plus more as needed to taste
  • tsp ground black pepper, plus more as needed to taste
  • 1 ½ cups chicken stock, low sodium
  • 1 tsp chicken base, such as Better than Bouillon
  • 1 ½ cups frozen mixed vegetables, thawed and well-drained
  • 3 cups cooked chicken, chopped
  • ½ tsp dried thyme
  • 1 tbsp chopped parsley
  • ¼ cup heavy whipping cream
  • Tater tots (about 45 regular or 70 mini)

Instructions

  • Heat the oven to 400°F and lightly butter a 2-quart baking dish.

  • Melt the butter in a sauté pan or saucepan over medium heat. Add the onion and celery and cook, stirring, for 4 to 6 minutes or until the onions are translucent.

  • Add the flour, salt, and pepper to the onion and celery mixture, and continue cooking for 2 minutes, stirring constantly.

  • Gradually stir in the chicken stock and chicken base and bring to a simmer.

  • Add the thawed mixed vegetables, chicken, thyme, parsley, and cream. Taste and adjust seasonings as needed.

    Adding the remaining ingredients to the roux.
  • Turn the mixture into the prepared baking dish and top with tater tots.

  • Bake the chicken casserole for 30 to 40 minutes or until the tater tots are golden brown and the filling is bubbling.
