Ingredients
  

  • 1 tbsp unsalted butter
  • 2 leeks, large, washed, thinly sliced (white and light green only)
  • ½ cup chicken broth
  • ½ tsp kosher salt, or to taste
  • tsp freshly ground black pepper, or to taste
  • 1 pinch cayenne pepper (optional)
  • ½ cup heavy cream
  • 2 tbsp grated Parmesan cheese

Instructions

  • Melt the butter in a large skillet over medium heat. Add the leeks, broth, kosher salt, pepper, and cayenne, if using. Cover the pan, reduce the heat to low, and cook for 10 minutes or until the leeks are softened.
