Preheat the oven to 350 F and line baking sheets with parchment paper.
In medium bowl, combine the flour, baking soda, baking powder, and salt. Set aside
In a large mixing bowl with an electric mixer, beat the butter and peanut butter with granulated and brown sugars until light and fluffy.
Beat in the eggs and vanilla until well blended.
With the mixer on the lowest speed, beat in the flour mixture just until blended.
Fold in the oats, chocolate chips, and chopped nuts.
Using a 1 1/2 tablespoon cookie scoop or rounded tablespoon, drop the dough onto the baking sheet. Alternatively, make the cookies larger or smaller.
Bake the cowboy cookies for 10 to 12 minutes, until they are lightly browned.
Cool the cookies on a rack and then transfer the cowboy cookies to an airtight container or resealable food storage bag.
