Ingredients
  

  • 1 1/2 cups flour, 200 g
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 3/4 teaspoon salt
  • 1 cup butter, room temperature
  • 1 cup peanut butter
  • 1 cup granulated sugar
  • 1 cup packed light brown sugar
  • 2 teaspoons vanilla extract
  • 2 large eggs
  • 2 cups quick cooking oats
  • 2 cups semisweet chocolate chips, or milk chocolate chips
  • 1 cup chopped pecans or walnuts
  • 1/2 to 1 cup flaked coconut, optional

Instructions

  • Preheat the oven to 350 F and line baking sheets with parchment paper.
  • In medium bowl, combine the flour, baking soda, baking powder, and salt. Set aside
  • In a large mixing bowl with an electric mixer, beat the butter and peanut butter with granulated and brown sugars until light and fluffy.
  • Beat in the eggs and vanilla until well blended.
  • With the mixer on the lowest speed, beat in the flour mixture just until blended.
  • Fold in the oats, chocolate chips, and chopped nuts.
  • Using a 1 1/2 tablespoon cookie scoop or rounded tablespoon, drop the dough onto the baking sheet. Alternatively, make the cookies larger or smaller.
  • Bake the cowboy cookies for 10 to 12 minutes, until they are lightly browned.
  • Cool the cookies on a rack and then transfer the cowboy cookies to an airtight container or resealable food storage bag.
