Ingredients
  

  • 2 large eggs
  • 3/4 cup milk
  • 1 cup cream-style corn
  • 2 teaspoons baking powder
  • 2 cups all-purpose flour
  • 1 tablespoon sugar, or to taste
  • 1/2 teaspoon salt
  • 2/3 cup ham, finely chopped, or 1/3 to 1/2 cup of diced cooked bacon
  • 1/4 cup finely chopped bell pepper, optional
  • Vegetable oil for deep frying

Instructions

  • Heat the oil to 365 F.
  • In a mixing bowl, whisk the eggs with the milk. Stir the cream-style corn into the egg mixture.
  • In another bowl, combine the flour, baking powder, and salt; stir to blend. Add the dry ingredients to the first mixture and stir to blend. Fold in the chopped ham or bacon along with bell pepper, if using.
  • With a tablespoon of cookie scoop, drop the batter into the oil and cook until golden brown.
  • Serve the fritters hot with applesauce, syrup, or a dip.
  • The recipe makes about 24 fritters.
