Ingredients
  

  • 1 pound lean ground beef
  • 1 pound Velveeta cheese, cubed
  • 1 (10-ounce) can diced tomatoes with green chilies, such as Ro-Tel

  • In a large skillet, brown the ground beef until fully cooked. Drain off excess fat.

  • Add the diced tomatoes with green chilies (Ro-Tel) and cubed Velveeta to the skillet with the meat.

  • Cook over medium heat, stirring frequently, until the cheese begins to melt, then reduce the heat to low. Cook just until the cheese is melted and everything is combined.
  • Serve from a slow cooker or chafing dish on warm to keep it melty and smooth. If it thickens too much, add a splash of milk.
