Comforting chicken à la king is quick, easy, and perfect for busy weeknights. It’s also a great way to use rotisserie chicken.

Ingredients
  

  • 5 tbsp butter
  • ¼ cup finely chopped shallots
  • 4 to 6 ounces sliced fresh mushrooms
  • cup all-purpose flour
  • ½ tsp kosher salt, plus more to taste as needed
  • ¼ tsp pepper
  • 1 ½ cups chicken broth
  • 1 cup heavy cream
  • 3 cups diced cooked chicken
  • ¼ cup chopped pimiento
  • 1 tbsp chopped fresh parsley, plus more for garnish if desired
  • Toast points, puff pastry shells, rice, potatoes, polenta, or grits (optional), for serving

Instructions

  • Melt the butter in a large sauté pan over medium heat. Add the shallots and mushrooms and cook for 5 to 7 minutes or until they are tender and their liquids evaporate. Blend in the flour, salt, and pepper. Continue stirring and cooking for 2 minutes.

  • Gradually add the chicken broth and cream, stirring constantly. Bring the mixture to a simmer and reduce the heat to low. Simmer for 5 minutes, stirring occasionally.

  • Add the chicken, pimiento, and parsley, and heat through. Taste and adjust the salt as needed.
    3 cups diced cooked chicken | 1/4 cup chopped pimiento | 1 tbsp chopped fresh parsley
  • Spoon over toast points, puff pastry shells, rice, potatoes, polenta, or grits, and garnish with chopped parsley, if desired.
